Again its me with a question 
I am going to create accounts via phone number only (without adding email).
now here is my question - did anybody with accounts created that way get forced by ig to add/verify email ?

Never happened to me.
Add an email anyway, a phone number is temporary even if you use real sim cards, that number will eventually get deactivated unless you too up the credit on it. If you get you account banned down the line you’ll at least have a chance to get it back with the email address

i am also into that @gar1od1 and @Johnny but i also like the idea - to just go with phone number created accounts - cause email = another footprint that maybe is not needed for "QUALITY accounts. spam accounts travel, fashion etc. are not in my interrest

If your accounts not assigned with email and got banned. You can recover them with randomly email

that’s if you remember the password+username, yes?
otherwise, without an email address and phone number deactivated, there’s no way to retrieve it?
You can do ‘forgot password’ with phone numbers, and the link password reset will come as sms. But if your phone number not active, Idk, I never try it.
