can anyone help me with showing me how to make my insatgram exports open in the right format? It always opens and has running/combined text together I have tried several types of formats.

I’ve had issues like this before. What fixed it for me is changing the “Text delimiter” to " instead or '. Or the other way around ’ instead of ".

If you’re talking about the lines of text separated by commas, that’s a .csv format. Save it as .csv and open it with excel 2016 then just click OK on the popup and you\ll get everything sorted. Or do this: https://www.ablebits.com/office-addins-blog/2014/05/01/convert-csv-excel/
